Organic Apple Cider Vinegar (ACV)

“An apple a day keeps the doctor away” just get your apple in the form of organic apple cider vinegar. Organic ACV enthusiasts (ACV = Apple Cider Vinegar) claim that it cures all sorts of ailments from allergies, contact dermatitis, arthritis, Candida, high blood pressure, weight issues, acid reflux, migraines, sore throats… and the list goes on and on. As wonderful as organic ACV is, it does not cure anything. But organic ACV does help your body do what it does best… heal itself.

There is much debate on how organic apple cider vinegar works. Organic ACV is comprised of over 50 amino acids, vitamins, minerals and enzymes. But the most important aspect of organic ACV is the pH. There is still a lot of debate about whether or not the body can only heal chronic illness when the body is slightly alkaline. What we do know is that many of the foods we eat leave an end-product that is either acidic or alkaline after it is processed. The liver and the kidney will then work to make sure your pH level remains in a healthy range (between 7.35 and 7.45).

We’ve all heard that in order to maintain a healthy weight, heart, etc. that we are supposed to have a diet that is high in fiber and low in fat, particularly fats from animals. Also, there have been numerous diets that limit carbohydrates (rice, pasta, grains, etc.) and people have lost weight. Guess what? These foods that we are supposed to avoid (sugar, meat, dairy, flour) leave acidic ash whereas vegetables and fruit leave alkaline ash. Recent studies about overweight people show that they have very high levels of Candida, necessary bacteria in the GI tract. Candida feeds off of highly acidic foods. The Candida produces mycotoxins, basically it is the fecal matter from the bacteria which is highly toxic. Our liver, kidney, immune system and other body parts must then process this waste in addition to processing the food we’re eating. When you have high levels of Candida your body is constantly trying to fight the “infection” and leaves your immune system in a weakened state.

The most important thing we can do to achieve optimal pH levels to keep the Candida growth at normal, healthy levels is to eat a well balanced diet. But realistically, most people have lives that don’t enable them to eat well all the time. Supplementing your diet with organic ACV can help keep your pH levels in your GI tract in balance and help your body to remain slightly alkaline to fight off disease. An added benefit is that your body can eliminate your food in a proper fashion thus preventing further weight gain (provided you are not severely overeating) and can even facilitate weight loss.

It is important to mention that there is a difference between commercial ACV and organic ACV. First off, apples are on the top ten list of foods with high levels of toxins and pesticides and you should always buy organic whenever possible. Secondly, organic ACV contains the “vein of the mother.” The cloudy substance you see at the bottom of the bottle (which by the way, you should shake the bottle each time you take some to distribute the vein) was known in ancient cultures to heal. It is the vein that has all the nutritional value (the amino acids, vitamins, etc.). The clear pasteurized varieties have no nutritional value. However, if you have some regular ACV around your house, it is a wonderful cleaning agent. During the civil war, it was used by doctors to help combat gangrene and infections. It is a natural way to clean your wounds without worry of harsh chemicals irritating the skin.

Also, beware of ACV tablets. The tablets are not the same as the liquid and are not regulated in the same manner. Recent studies have found that the pH levels can vary from 2.5 to 5.9 and often don’t even include real ACV but synthetic variations instead.

If you are suffering from a chronic illness and/or are taking any medication, it is always best to talk to your doctor before making any changes to your lifestyle and diet.

There are different methods and schools of thought as for how much and how often to take ACV. Most doctors recommend beginning with taking 2 tablespoons once a day prior to eating your food, during or just after. When you take the ACV with acidic foods, it will help balance the pH level in your digestive system by  breaking down the acidic food. It will also begin to breakdown any remaining acidic ash that is left in your GI tract. Be careful about introducing too much into your system too quickly as it can cause some side effects, such as gas, bloating, nausea, heatburn or anything else that you can get by eating food. As your system adjusts to the ACV, you can increase the frequency but not to exceed 6 tablespoons a day.

There are two primary concerns when taking ACV.

  1. It can cause damage to your tooth enamel when drinking it straight. One way of diluting the ACV is with distilled water and baking soda (just mix it in a large container because when you mix vinegar and baking soda it will bubble initially). Another way is making a “hot toddy” of sorts by heating some warm water and adding honey (use raw honey not commercial&… raw honey has amazingly wonderful health benefits, commercial honey is the equivalent of pure table sugar).
  2. Some physicians claim that taking ACV can cause calcium loss in the same manner as when you consume dairy products (which contrary to the dairy industry’s marketing, dairy products can cause a reduction in calcium in your bones). This is an important issue for cancer patients. Many of the treatments they have been given are so toxic to their system that there is great fear in introducing new remedies. However, there is much research that indicates that cancer cannot survive in an alkaline environment. Also, there have been numerous cases of people suffering from arthritis being “cured” by taking ACV.

Each person is different, so what might work for one person may not work for another. Listen to your body. If you feel that it is having a positive effect on you, keep taking it. If you don’t think its working, stop taking it.


I take Organic ACV 2-3 times a day before my meals. I take it like a shot but I add a little water. I know that is not the right way to take it, but I haven’t had any adverse affects and it hasn’t effected my teeth. If you are worried, dilute it!
