Chocolate and peanut butter ice cream

I must admit, I’m pretty proud of my intelligence. But I can’t believe how long it took me to come to the realization I made today.

Ever since I was in 2nd grade, I have been in love with Baskin Robbins’ Peanut Butter ‘n Chocolate ice cream. I’ve tried many imitations but none have even come close to my first love. That is until tonight.

My husband has a serious sweet tooth and I indulge his whims by keeping ice cream in the house. We have some nearly every night after dinner – not huge amounts, a serving size – about a ½ cup.

I’m a big fan in keeping everything as natural as possible, thus I’m a big fan of Trader Joe’s ice cream. For instance, the chocolate ice cream only has 7 ingredients (cream, milk, sugar, cocoa, egg yolks, carob bean gum and guar gum). Unfortunately, they only have 3 flavors: coffee, chocolate and vanilla.

UPDATE: Although the vanilla & almond butter is good, it doesn’t compare to they yumminess of the peanut butter & chocolate~!

However, tonight when I was getting ready to make my cup of chocolate ice cream, the container was sitting next to the jar of peanut butter that I had just bought. All of a sudden, the heavens opened up and I heard angels singing the most beautiful song.  Put the peanut butter in the cup with the ice cream.

I was a bit skeptical as I took that first bite, but I was not disappointed. It tasted every bit as good as my childhood favorite. But I think it tasted even better when I realized that I could make it at home tomorrow night, too!  Although, I think I’m gonna try almond butter and vanilla tomorrow night.
